Pan-fried pineapple salmon – super easy and delicious!

Looking for a easy but delicious dish that can be made in a short amount of time? Pan-fried pineapple salmon is the solution. This dish is very popular in Malaysia and other Asian countries. It is quite a special twist on other original simple salmon dishes that are out there. To get some more variation you can also add some fresh tomato if you like, chopped fresh chillies and some mint leaves to the salsa put on the salmon. In this way the dish will have a good balance of sweet, sour and spicy taste. If you are a bit experienced in cooking you can prepare this dish within 30 minutes.

If you want to keep things even more easy you can replace the fresh chilli and tomatos by a nice Thai chili sauce. Mix it together with the pineapple and thats it.

So what do you need to prepare this dish?

Here are the ingredients:

1 large red tomato, diced finely
1/2 onion, diced finely
1/2 cup of finely diced pineapples
15 mint leaves, torn
1 red chili, chopped finely (or a few spoons of Thai chili sauce)
juice of 1/2 lime
1/2 teaspoon salt
1/2 teaspoon sugar
1 tbsp vinegar

Cooking Methode:

You can put all the ingredients for the salsa in a food processor to keep things easy.
But if you want to have a bit of a texture in the dish it is recommended to cut things by hand.

Mix all the ingredients together well and let it sit for 15 minutes before topping it on your pan fried salmon.
The salsa also goes very well with steaks.
